Turkish Ezme is a vibrant and tangy mezze salad made from finely chopped fresh tomatoes, onions, bell peppers, parsley, and a blend of spices including Aleppo pepper and sumac. Enhanced with lemon juice, olive oil, and tomato paste, this fresh salad is perfect as a dip, condiment, or side dish to complement grilled meats and Middle Eastern cuisine.

  • 3 large tomatoes, firm and fresh
  • 1 medium white onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, finely chopped

  • 1 tbsp tomato paste
  • 1 lemon, juice of
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp Aleppo pepper
  • 1 tsp sumac

Instructions

  1. Chop the Vegetables: Finely chop the tomatoes, then finely chop the white onion, green bell pepper, and red bell pepper. Place all the chopped vegetables into a bowl.
  2. Add Garlic and Parsley: Mince the garlic cloves and finely chop the parsley. Add both to the bowl with the chopped vegetables and stir gently to combine.
  3. Incorporate Seasonings: Add tomato paste, olive oil, freshly squeezed lemon juice, kosher salt, black pepper, Aleppo pepper, and sumac to the vegetable mixture. Stir thoroughly to ensure all ingredients are well blended.
  4. Marinate and Chill: Cover the bowl and refrigerate the Ezme for at least 30 minutes to allow the flavors to meld together.
  5. Serve: Serve chilled as a mezze, salad, dip with pita or Turkish pide bread, or as a sauce alongside kebabs and grilled meats.

Notes

  • Ezme pairs beautifully as a mezze with hummus, baba ganoush, muhammara, labneh, and pita chips.
  • Use fresh firm tomatoes for best texture and flavor; canned tomatoes are not suitable as they alter the texture and taste.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
  • This salad cannot be frozen as it will negatively affect texture and flavor.
  • Green bell peppers can be substituted with mild peppers if preferred for less bitterness.
