- Sauté Vegetables: Heat olive oil in a sauté pan over medium-low heat. Add the diced carrots and chopped red onion, cooking until the onions turn translucent. Then, add the diced garlic and continue cooking until the garlic starts to brown.
- Cook Turkey: Add the ground turkey to the pan, stirring to break up the meat. Increase heat to medium and cook thoroughly, stirring occasionally until the turkey is fully cooked and no longer pink.
- Add Seasonings and Bell Pepper: Stir in the homemade chili seasoning and the chopped red bell pepper. Mix well to combine the spices evenly throughout the mixture.
- Add Beans and Tomatoes: Pour in the drained kidney beans, black beans, diced tomatoes, tomato paste, and chicken stock. Stir everything together thoroughly and bring the mixture to a low boil.
- Simmer Chili: Reduce heat to a gentle simmer. Let the chili cook uncovered for 20 to 25 minutes, stirring occasionally, until it thickens to your preferred consistency.
- Serve: Serve the chili hot as is or with optional toppings like sour cream, shredded cheese, and tortilla chips for extra flavor and texture.
