Chicken
- 2 small chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons poultry seasoning (or a mix of salt, pepper, and garlic powder)
Bread and Butter Spread
- 1 Italian style loaf
- 1 stick (½ cup) unsalted butter, melted
- 1 tablespoon minced garlic (or garlic paste)
- 1 tablespoon chopped parsley
- 1 teaspoon crushed red pepper flakes
Sauce
- ½ stick (¼ cup) unsalted butter
- 1 tablespoon minced garlic
- ½ cup heavy cream
- ¼ cup shredded Parmesan cheese
- 1 tablespoon chopped parsley
Topping
- ½ cup shredded mozzarella cheese
- Remaining half of the prepared Alfredo sauce from above steps
- Prepare the Chicken: Cut the chicken breasts into ½ inch pieces. Transfer them to a bowl, drizzle with 1 tablespoon of olive oil, and season with 1 tablespoon of poultry seasoning or a mixture of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken pieces until they are golden brown and cooked through, about 5-7 minutes. Set aside.
- Prepare the Bread: Slice the Italian loaf lengthwise in half. In a small bowl, combine 1 stick of melted butter, 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and 1 teaspoon of crushed red pepper flakes. Spread this garlic butter mixture evenly on both halves of the bread. Place the bread on a baking sheet and toast in a preheated 350°F (175°C) oven for 5 to 10 minutes, checking after 5 minutes to reach your desired toasting level.
- Make Alfredo Sauce: Using the same pan that was used to cook the chicken, heat over medium-low heat. Add ½ stick of butter and let it melt. Stir in 1 tablespoon of minced garlic and cook for 2-3 minutes until fragrant, being careful not to burn the garlic. Lower the heat to low and add ½ cup of heavy cream, ¼ cup of shredded Parmesan cheese, and 1 tablespoon of chopped parsley. Simmer gently while stirring continuously for 3-5 minutes until the sauce slightly thickens. Remove from heat.
- Assemble the Bread: Spread half of the prepared Alfredo sauce on top of the toasted bread halves. Evenly distribute the cooked chicken pieces over the sauce, then sprinkle the shredded mozzarella cheese. Drizzle or spoon the remaining Alfredo sauce over the top.
- Bake and Serve: Return the assembled bread to the oven at 350°F (175°C) and bake for another 5 minutes or until the cheese is fully melted and bubbly. Remove from the oven, slice the bread into 2-3 inch pieces, and serve warm. Enjoy the rich, garlicky, cheesy goodness!
Notes
- Use fresh garlic for the most robust flavor; garlic paste can be used as an alternative.
- You can substitute shredded chicken for the fresh chicken breasts if short on time.
- Adjust red pepper flakes according to your preferred spice level or omit for a milder flavor.
- To make it easier to eat, slice the bread into bites right after baking while still warm.
- Store leftovers covered in the refrigerator for up to 2 days and reheat in the oven to maintain crispness.
