Ingredients

Scale

For the Fish

  • 4 medium fillets White Fish (Cod, Halibut, or Sea Bass)
  • 1 lemon, sliced thinly
  • 0.25 cup Fresh Parsley, chopped

For the Veggies & Seasoning

  • 3 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 cup Cherry Tomatoes, halved
  • 1 piece Bell Pepper, thinly sliced
  • 1 piece Zucchini, thinly sliced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika
  • Salt and Black Pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the fish and vegetables evenly.
  2. Prepare Baking Dish: Lightly coat a baking dish with about 1 tablespoon of olive oil to prevent sticking and add flavor.
  3. Arrange Vegetables: Lay out the cherry tomatoes, thinly sliced bell pepper, and zucchini evenly at the bottom of the baking dish.
  4. Season Vegetables: Drizzle the remaining olive oil over the vegetables, then add minced garlic, dried oregano, paprika, salt, and black pepper. Toss gently to coat all the veggies with the seasoning.
  5. Add Fish Fillets: Nestle the white fish fillets on top of the seasoned vegetable bed, creating an even layer.
  6. Add Lemon Slices: Place a few thin lemon slices on each fish fillet to enhance freshness and flavor.
  7. Bake Covered: Cover the baking dish tightly with aluminum foil and bake for 20-25 minutes, or until the fish flakes easily with a fork.
  8. Optional Broil: For a crispy top, remove the foil and broil the dish uncovered for an additional 5-10 minutes until golden and slightly crisp.
  9. Garnish and Serve: Sprinkle fresh chopped parsley generously over the fish and vegetables just before serving for a bright and fresh finish.

Notes

  • Optional: Add olives to the vegetables for extra Mediterranean flair and a briny kick.
  • You can substitute the white fish with other flaky varieties like tilapia or haddock if preferred.
  • Leftovers can be refrigerated for up to 2 days and gently reheated.
