Ingredients

Scale

Main Ingredients

  • 1 cup Sweet chili sauce
  • ¼ cup Soy sauce or tamari or coconut aminos (for gluten-free)
  • 3 tablespoons Honey
  • 2 Limes, juiced
  • ¼ teaspoon Ground ginger
  • 2 Chicken breasts, halved into 4 cutlets
  • 1 tablespoon Olive oil or other cooking oil
  • 1 Green onion, thinly sliced
  • Lime wedges for serving

Instructions

  1. Prepare the Marinade: Whisk together sweet chili sauce, soy sauce, honey, lime juice, and ground ginger in a bowl until well combined to create a flavorful marinade.
  2. Marinate the Chicken: Add the halved chicken breasts to a resealable bag or shallow dish, pour in half of the marinade, and refrigerate for at least 30 minutes to infuse the chicken with flavor.
  3. Sear the Chicken: Heat olive oil in a skillet over medium-high heat and sear the chicken pieces for 4–5 minutes per side until they are golden brown and cooked through.
  4. Simmer with Sauce: Lower the heat to medium, pour the remaining marinade over the chicken in the skillet, and simmer for 3–4 minutes until the sauce thickens and wonderfully coats the chicken.
  5. Pressure Cook: Transfer the chicken and the thickened sauce to a pressure cooker. Seal the lid properly, set to poultry mode, and cook for 10 minutes. Use a quick release method to release steam, or wait a few minutes for natural pressure release if preferred.
  6. Garnish and Serve: Serve the chicken garnished with thinly sliced green onions and lime wedges. This pairs excellently with rice or noodles.

Notes

  • Serve with rice or noodles to complement the sweet and tangy flavors.
  • Marinate the chicken ahead of time for the best depth of flavor.
  • Store leftovers in the refrigerator for up to 4 days or freeze for future meals.
