  • ½ cup (120 ml) plant-based milk

Dry Ingredients

  • 1 ½ cup (130 g) ground oats
  • ⅔ cup (150 g) sugar of choice
  • 8 tbsp (50 g) cocoa powder (Dutch-Process recommended)
  • 5 tbsp (50 g) ground hemp seeds or any ground nuts/seeds
  • 1 tbsp cinnamon (optional)
  • 2 tsp baking powder

Instructions

  1. Cook Sweet Potatoes: Prepare the sweet potatoes by baking, boiling, or steaming until soft. Let them cool before use. This step ensures the sweet potatoes are tender and easy to blend.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (180°C). Line a 9″ x 6″ (23 cm x 15 cm) pan or a larger pan like 8×8 with parchment paper to prevent sticking and for easy removal of the brownies.
  3. Blend Wet Ingredients: In a large food processor, combine cooked sweet potatoes, bananas, and plant-based milk. Process until smooth and creamy to create a uniform wet base.
  4. Add Dry Ingredients: Add the ground oats, sugar, cocoa powder, ground hemp seeds, cinnamon (if using), and baking powder to the processor. Mix until you achieve a smooth, sticky batter.
  5. Transfer Batter and Bake: Pour the batter into the prepared pan, spreading evenly. Bake in the preheated oven for 30-40 minutes. Check with a toothpick inserted in the center; it should come out almost clean but the brownies may still be slightly crumbly.
  6. Cool and Serve: Allow brownies to cool for at least 20-30 minutes before cutting into bars. They can be topped with vegan chocolate sauce for extra indulgence. Best enjoyed on the second day for enhanced flavor and texture.
