Ingredients

Scale

Apple Filling

  • 6 medium sized apples (Gala recommended), chopped
  • 1/2 teaspoon vanilla extract
  • 2 tablespoon lemon juice
  • 2 tablespoon all purpose flour
  • 1 cup lightly packed brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Sugar Cookie Topping

  • 16.5 ounces premade sugar cookie dough roll

Cinnamon-Sugar Topping

  • 2 tablespoon sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the cobbler.
  2. Prepare Apples: Core and chop the apples into bite-sized pieces. Place them into a large mixing bowl.
  3. Mix Filling: To the chopped apples, add lemon juice, vanilla extract, nutmeg, cinnamon, brown sugar, and all-purpose flour. Stir thoroughly to combine all ingredients evenly, ensuring the apples are well coated.
  4. Assemble Filling: Grease a 9×13 inch baking dish and transfer the apple mixture into it, spreading out evenly.
  5. Prepare Cookie Topping: Open the premade sugar cookie dough and slice it into 18 even pieces. Arrange these slices over the apple filling in the baking dish, covering the apples as much as possible but leaving small gaps.
  6. Add Cinnamon-Sugar Topping: In a small bowl, mix the sugar and cinnamon together. Sprinkle this mixture evenly over the cookie dough slices for a sweet, spiced crust.
  7. Bake: Place the assembled cobbler into the preheated oven and bake for 40 minutes until the cookie topping is golden brown and the apple filling is bubbly.
  8. Serve: Allow the cobbler to cool slightly, then serve warm for the best flavor and texture.

Notes

  • Gala apples are recommended for their natural sweetness; however, you can substitute with Granny Smith or Fuji apples for a tarter or crisper texture.
  • Make sure the apples are chopped into bite-sized pieces for even cooking and easy serving.
  • If you prefer a thicker filling, add an extra tablespoon of flour to help absorb juices.
  • For added richness, serve with vanilla ice cream or whipped cream.
  • Premade sugar cookie dough simplifies preparation, but homemade sugar cookie dough can be used as well.
  • Ensure the baking dish is well greased to prevent sticking.
