Ingredients

Scale

Corn and Vegetables

  • 2 ears of corn, grilled and kernels removed
  • 1 large cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the Corn: Preheat your grill to medium-high heat. Place the corn cobs on the grates and cook for 10-12 minutes, turning occasionally, until the corn is tender with slight charring. Remove from the grill and let cool.
  2. Remove Kernels: Using a sharp knife, carefully slice the kernels off the cooled corn cobs and transfer them to a large mixing bowl.
  3. Combine Vegetables: Add the diced cucumber, finely chopped red onion, and chopped fresh cilantro to the bowl with the corn kernels and mix well to combine.
  4. Prepare Dressing: In a separate small bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth.
  5. Mix Salad: Pour the dressing over the corn and cucumber mixture and toss until everything is evenly coated.
  6. Chill: Refrigerate the salad for at least 30 minutes to allow flavors to meld and the salad to chill.
  7. Adjust and Garnish: Before serving, stir the salad and adjust salt and pepper if needed. Garnish with additional cilantro and a sprinkle of chili powder if desired.
  8. Serve: Serve chilled and enjoy this refreshing and creamy salad.

Notes

  • You can substitute mayonnaise with an equal amount of extra Greek yogurt for a lighter option.
  • Grilling the corn adds a smoky flavor, but you can also roast or boil the corn if a grill is not available.
  • For extra heat, add a pinch of cayenne pepper or diced jalapeño to the dressing.
  • This salad pairs well with Mexican-style dishes or barbecue meals.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
