Instructions

  1. Prepare the Marinade: In a bowl, combine the runny honey, ginger paste, sesame oil, white miso paste, garlic paste, soy sauce, rice wine, and chilli flakes. Stir until you get a sticky, runny paste that is well mixed.
  2. Marinate the Chicken: Add the diced chicken breasts to the marinade, stirring to ensure each piece is fully coated. Cover the bowl with clingfilm and refrigerate for at least 2 hours to allow the flavors to infuse.
  3. Heat the Wok and Cook the Chicken: Place a wok over medium heat and add the vegetable oil. Once hot, add the marinated chicken along with the marinade mixture. Cook on medium heat, stirring occasionally, until the chicken is fully cooked through, about 8-10 minutes.
  4. Caramelize the Chicken: Increase the heat to high and continue cooking the chicken for an additional 5 minutes. This step creates a sticky, caramelized finish that adds depth and texture to the dish.
