Ingredients

Scale

Chicken

  • 2 lbs boneless skinless chicken breast or thighs

Vegetables

  • 1 onion, thinly sliced
  • 4 garlic cloves, minced

Liquids and Seasonings

  • ¼ cup chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Prep: Place the chicken in the bottom of the slow cooker. Add the thinly sliced onion on top of the chicken, ensuring they are spread evenly to enhance flavor penetration.
  2. Mix: In a small bowl, whisk together the chicken broth, lemon juice, minced garlic, olive oil, dried oregano, dried thyme, sea salt, and black pepper until well combined. Pour this mixture evenly over the chicken and onions in the slow cooker.
  3. Cook: Cover the slow cooker with the lid and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F (75°C).
  4. Shred: Once the chicken is fully cooked, shred it directly in the slow cooker using two forks to allow the meat to soak up all the flavorful juices. Serve warm with your choice of rice, pasta, pita, or over a Greek salad for a complete meal.

Notes

  • Use either chicken breasts or thighs depending on your preference. Thighs will be juicier but breasts work well too.
  • For an extra herby flavor, add a handful of fresh chopped parsley or dill before serving.
  • If you prefer a thicker sauce, remove the cooked chicken and reduce the liquid on the stovetop before shredding.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • Serve with tzatziki sauce for a classic Greek flavor pairing.
