A comforting slow cooker recipe featuring tender chicken breasts and seasoned potatoes cooked in a rich garlic Parmesan sauce, topped with melted mozzarella for a delicious and easy meal.

Ingredients

Scale

Chicken

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken)
  • 1 cup shredded mozzarella cheese

Potatoes

  • 5 medium-sized potatoes, chopped
  • 2 tbsp olive oil
  • Salt, pepper, garlic powder, paprika (to season potatoes)

Instructions

  1. Prepare Potatoes: Wash and chop the potatoes into bite-sized pieces. In a bowl, toss them with olive oil, salt, pepper, garlic powder, and paprika to evenly coat.
  2. Layer Potatoes: Place the seasoned potatoes in the bottom of the slow cooker to form the base layer of the dish.
  3. Season Chicken: Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning for a flavorful crust.
  4. Arrange Chicken: Lay the seasoned chicken breasts on top of the potatoes in the slow cooker.
  5. Add Garlic and Sauce: Spread the minced garlic evenly over the chicken, then pour enough Buffalo Wild Wings Garlic Parmesan Sauce to thoroughly coat the chicken.
  6. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fully cooked and potatoes are tender.
  7. Add Cheese: In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the chicken and potatoes. Cover to allow the cheese to melt perfectly.
  8. Serve: Serve warm, optionally garnished with extra Parmesan cheese or fresh herbs to enhance the flavor.

Notes

  • Make sure to cut potatoes into similar-sized pieces to ensure even cooking.
  • You can substitute Buffalo Wild Wings Garlic Parmesan Sauce with any garlic Parmesan sauce or homemade version.
  • For a spicier twist, add crushed red pepper flakes before cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
  • Use mozzarella cheese with good melting qualities for the best texture.
