Rice Krispie Treats

  • 7 cups Rice Krispies Cereal
  • 6 tablespoons salted butter
  • 16 ounces mini marshmallows
  • 6 ounces white candy melts or white chocolate chips

Instructions

  1. Prepare chocolate eyes: Melt the dark cocoa candy melts in the microwave in 30-second bursts at high power, stirring after each burst until smooth. Pour the melted chocolate into a small zip-top bag and snip off the tip to create a piping bag.
  2. Pipe eyes: Pipe 24 small teardrop-shaped eyes onto a parchment paper-lined baking sheet. Place the sheet in the freezer for about 3 minutes to harden the chocolate eyes. Once hardened, remove and set aside at room temperature.
  3. Prepare cereal mixture: Spray a large mixing bowl with baking spray and pour in the Rice Krispies cereal. Set aside.
  4. Melt butter and marshmallow mixture: Cut the butter into small pieces and place them in a medium-large saucepan over low heat. Add the mini marshmallows and white candy melts or white chocolate chips. Stir frequently until about 75% of the marshmallows and chocolate have melted, then remove from heat and stir vigorously until everything is smooth and fully melted.
  5. Combine with cereal: Pour the melted marshmallow and chocolate mixture over the Rice Krispies cereal in the mixing bowl. Stir gently but thoroughly until the cereal is well coated.
  6. Shape ghosts: Let the mixture cool for a few minutes until it is cool enough to handle but still pliable. Pinch off twelve portions of about ½ cup each and roll them into balls. Shape each ball into a cone, pinching the top into a point. Curve the pointed tops to create a ghostly shape.
  7. Add eyes: Press two chocolate eyes onto each Rice Krispie ghost. The eyes should stick directly; if not, use a little of the remaining melted candy melts to adhere them.
  8. Dry and set: Let the formed ghosts dry and set at room temperature for about one hour before packaging or serving.
