For the Tzatziki

  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • Salt & pepper to taste

For the Lemon Vinaigrette

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey (omit for Whole30)
  • 1 garlic clove, minced
  • ½ teaspoon dried oregano
  • Salt & pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, mix 3 tablespoons olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak evenly with this marinade and let it rest for 30 minutes up to 4 hours to absorb the flavors.
  2. Make the Tzatziki: Combine plain Greek yogurt, grated and drained cucumber, lemon juice, minced garlic, fresh dill, and salt and pepper in a bowl. Mix well and refrigerate to chill while you prepare the rest of the dish.
  3. Whisk the Lemon Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper. Adjust seasonings to taste and set aside.
  4. Cook the Steak: Heat a skillet over medium-high heat until very hot. Sear the marinated steak for 4 to 5 minutes on each side for medium-rare, or longer depending on desired doneness. Remove from heat and let it rest for 5–10 minutes before slicing thinly against the grain to maintain tenderness.
  5. Assemble the Bowl: Start with a base of cooked grains or cauliflower rice in a bowl. Layer with sliced steak, cherry tomatoes, diced cucumber, red onion, kalamata olives, feta cheese (if using), and fresh herbs. Drizzle with the prepared lemon vinaigrette and a generous dollop of chilled tzatziki sauce. Serve immediately and enjoy!
