This Pineapple Juice Cake is a moist and flavorful dessert that combines the tropical sweetness of pineapple juice with a classic yellow cake mix. Topped with a luscious pineapple glaze, this Bundt cake is perfect for parties, family gatherings, or a delightful everyday treat.

Ingredients

Scale

Cake

  • 1 box yellow cake mix
  • ¾ cup vegetable oil
  • ¾ cup pineapple juice
  • 4 large eggs

Glaze

  • 2 cups powdered sugar
  • 4 tablespoons pineapple juice
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat and prepare pan: Preheat your oven to 325°F (163°C) and grease a Bundt pan thoroughly to prevent sticking.
  2. Mix cake batter: In a large mixing bowl, combine the yellow cake mix, vegetable oil, pineapple juice, and eggs. Using a hand mixer on medium speed, beat the ingredients for about 2 minutes until the batter is smooth and homogenous.
  3. Pour batter and bake: Pour the prepared batter evenly into the greased Bundt pan and smooth the top with a spatula. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  4. Prepare glaze: While the cake bakes, prepare the glaze by heating the powdered sugar, pineapple juice, and unsalted butter together in a small saucepan over low heat. Stir continuously until the mixture is smooth and slightly thickened, making sure not to boil.
  5. Apply glaze to cake: Once the cake is out of the oven, use a skewer or fork to poke holes all over the top surface of the cake. Slowly pour the warm glaze evenly over the cake while it is still in the pan, allowing the glaze to soak through these holes.
  6. Cool and serve: Let the cake sit for about 15 minutes to fully absorb the glaze. Then, carefully invert the cake onto a serving plate and serve warm or at room temperature.

Notes

  • For added texture, consider folding in ½ cup of shredded coconut or nuts to the batter before baking.
  • If you prefer a stronger pineapple flavor, substitute pineapple juice for water in the cake mix as well.
  • The glaze is best applied while warm to help it soak into the cake properly.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • You can dust the top with powdered sugar or garnish with fresh pineapple slices for presentation.
