Ingredients

Scale

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Chocolate Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the Pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
  2. Melt Butter, Marshmallows, and Peanut Butter: In a large saucepan over low heat, gently melt the unsalted butter, mini marshmallows, and peanut butter together while stirring constantly to ensure a smooth, combined mixture without burning.
  3. Add Rice Krispies: Remove the saucepan from heat and stir in the Rice Krispie cereal until evenly coated with the marshmallow-peanut butter mixture.
  4. Press Mixture into Pan: Using hands lightly sprayed with non-stick cooking spray, press the mixture evenly into the prepared 9×13 inch pan to create a compact base layer.
  5. Melt Chocolate Topping: Place the chocolate chips in a medium heatproof bowl. Microwave in 45-second intervals at medium power, stirring between each until almost melted. Then stir continuously until the chocolate is smooth and fully melted. Add and mix in 2 teaspoons of vegetable oil to give the chocolate a glossy finish.
  6. Top Bars and Set: Pour the melted chocolate evenly over the pressed rice krispie base, smoothing the surface if needed. Let the chocolate harden at room temperature for about 2 hours.
  7. Cut and Store: Once set, cut the treat into squares and store in an airtight container at room temperature to maintain freshness.

Notes

  • Use natural or creamy peanut butter for the best texture and flavor.
  • Spraying your hands with cooking spray prevents sticky mess when pressing the mixture into the pan.
  • You can substitute the chocolate chips with chopped chocolate if preferred.
  • For quicker setting, you may refrigerate the bars after topping with chocolate.
  • Store leftovers in an airtight container for up to 3 days at room temperature.
