  • 1 Brown Onion, finely sliced
  • 4 cloves Garlic, thinly sliced
  • 1/3 cup Cherry Tomatoes, sliced in half
  • 1/4 cup Fresh Basil Leaves

Canned Goods

  • 400 grams/14 oz Tinned Chopped Tomatoes

Dairy

  • 100 grams/3.5 oz Greek Feta, cubed

Liquids

  • 1 tbsp Olive Oil (extra virgin)
  • 3 cups/750 ml Boiling Water

Instructions

  1. Combine Ingredients: Add the pasta, sliced onion, garlic, cherry tomatoes, chopped tomatoes, fresh basil leaves, cubed feta, salt, black pepper, chili flakes (if using), olive oil, and boiling water to a large pot. Stir thoroughly to combine all the ingredients together.
  2. Bring to Boil: Place the pot over high heat and bring the mixture to a rolling boil. This helps the pasta start cooking and the flavors begin to meld.
  3. Simmer: Once boiling, cover the pot and reduce the heat to a low simmer. Let the pasta cook gently for 15-20 minutes, which is usually 5-10 minutes longer than the standard pasta instructions to allow the flavors to intensify and the sauce to thicken.
  4. Stir Regularly: Stir the pasta every 3 minutes or so during cooking to prevent the pasta from sticking to the bottom of the pot and to ensure even cooking.
  5. Check Texture: At the 15-minute mark, check the pasta. If it’s still firm, continue cooking until it reaches a creamy, tender consistency and the sauce has thickened and is not watery.
