Ingredients

Scale

Oatmeal Layers

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup + 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/3 cups old-fashioned oats

Chocolate Fudge

  • 1 1/4 cups semi-sweet chocolate chips (or 50-70% dark chocolate)
  • 1 cup sweetened condensed milk (one 14-oz can – do not use evaporated milk)
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the Pan: Preheat the oven to 350°F (177°C). Line an 8×8 inch square baking pan with parchment paper allowing an overhang on the sides, or use aluminum foil and lightly grease it for easy removal.
  2. Make Oatmeal Cookie Layer: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla extract, whisking well to combine. Fold in the all-purpose flour, salt, and cinnamon, followed by the old-fashioned oats until fully incorporated.
  3. Layer the Oatmeal Mixture: Spoon about three-quarters of the oatmeal mixture evenly into the prepared baking pan, pressing lightly to form a solid base. Reserve the remaining mixture (about 1/2 to 3/4 cup) for topping.
  4. Prepare the Chocolate Fudge: In a medium saucepan, add about 1/2 inch of water and heat over low-medium heat. Place a large heatproof glass bowl on top, ensuring it does not touch the water (double boiler method). Add the chocolate chips, sweetened condensed milk, and butter to the bowl. Stir gently as the mixture melts until smooth and fully combined. Remove from heat.
  5. Assemble Bars: Pour the smooth chocolate fudge evenly over the oatmeal base layer in the pan. Then, drop tablespoons of the reserved oatmeal mixture over the chocolate fudge, spacing unevenly so some fudge remains visible.
  6. Bake the Bars: Place the pan in the preheated oven and bake for 25 to 30 minutes, or until the oatmeal pieces on top appear set but bars remain chewy. Avoid overbaking to maintain softness.
  7. Cool and Serve: Allow the bars to cool completely in the pan for about 3 hours. Use the parchment paper or foil overhang to lift the bars out onto a cutting board. Slice into 16 bars with a sharp knife and serve.

Notes

  • For a thinner chocolate fudge layer with less richness, reduce chocolate chips to 3/4 cup plus 2 tablespoons, sweetened condensed milk to 3/4 cup, and butter to 1 1/2 tablespoons.
  • Store bars in an airtight container at room temperature for up to 4 days to maintain freshness.
  • Nutrition information provided is an estimate based on cutting the pan into 16 equal bars.
