Ingredients

Scale

Chicken:

  • 4 boneless, skinless chicken breasts (about 68 oz each)

Filling:

  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Seasoning & Cooking:

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep the Chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to slice all the way through to create space for the filling.
  2. Make the Filling: In a medium bowl, combine shredded mozzarella, softened cream cheese, ranch seasoning, garlic powder, and onion powder. Stir until smooth and well combined into a creamy filling.
  3. Stuff the Chicken: Spoon the cheese mixture evenly into each chicken breast pocket. Secure the opening with toothpicks if needed to hold the filling in place. Season the outside of each chicken breast with salt and black pepper.
  4. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for 2–3 minutes on each side until golden brown and crisp, locking in the flavors.
  5. Bake: Transfer the skillet to the preheated oven and bake the chicken for 20–25 minutes or until the internal temperature reaches 165°F (74°C) and the cheese filling is melted and bubbly.
  6. Serve: Remove toothpicks and garnish with freshly chopped parsley if desired. Serve hot and enjoy the juicy, cheesy stuffed chicken breasts.

Notes

  • Make sure not to cut all the way through the chicken breasts to prevent the filling from spilling out.
  • Using an oven-safe skillet is key for searing then baking in the same pan.
  • Check the internal temperature with a meat thermometer to ensure chicken is fully cooked and safe to eat.
  • Feel free to substitute or add herbs such as thyme or basil for extra flavor.
  • If you like more spice, add a pinch of cayenne pepper to the filling mixture.
