Ingredients

Scale

For the Muffins

  • 2 cups all-purpose flour (substitute with a 1:1 gluten-free flour blend if needed)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp holiday spice mix (cinnamon, nutmeg, etc.)
  • 3/4 cup granulated sugar (can be replaced with coconut sugar)
  • 1 cup dried fruits & candied peel (substitute with any preferred dried fruits)
  • 1 medium egg (for vegan option, use a flax egg)
  • 1 cup buttermilk or yogurt (substitute with non-dairy milk plus 1 tbsp lemon juice or vinegar)
  • 1/2 cup melted butter (use plant-based butter for dairy-free)
  • 2 tbsp melted butter (for topping, optional)

For Topping (optional)

  • 1 tbsp granulated sugar (to dust over warm muffins for extra sweetness)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and prepare your muffin pan by greasing it or lining it with paper liners to prevent sticking.
  2. Mix dry ingredients: In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, holiday spice mix, granulated sugar, and dried fruits.
  3. Mix wet ingredients: In a separate bowl, whisk together the egg, buttermilk (or yogurt), and melted butter until the mixture is smooth and well combined.
  4. Combine wet and dry: Gently fold the wet ingredients into the dry ingredients, mixing just until combined to avoid overworking the batter, which keeps the muffins moist and tender.
  5. Fill muffin cups: Spoon the batter into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
  6. Bake: Place the muffin pan in the oven and bake for approximately 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool muffins: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. Add topping: Optionally, brush the warm muffins with melted butter and dust with granulated sugar for a festive finish.

Notes

  • You can substitute dried fruits with your favorites such as raisins, currants, or chopped dried apricots.
  • For a vegan version, replace the egg with a flax egg and use non-dairy milk with lemon juice in place of buttermilk.
  • Use plant-based butter for a dairy-free option.
  • Do not overmix the batter to keep the muffins moist and tender.
  • Serving warm and fresh with optional butter and sugar topping enhances the festive flavors.
