Ingredients

Scale

Meatloaf

  • 2 lbs Ground Chicken
  • 1 cup Grated Parmesan Cheese
  • 1/2 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Garlic, minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Basil
  • 1/2 teaspoon Dried Parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Whole Milk

Garlic Parmesan Glaze

  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • 1/4 cup Grated Parmesan Cheese
  • 1 tablespoon Chopped Parsley
  • 1 pinch Salt

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan to prevent sticking and ensure easy cleanup.
  2. Mix Meatloaf Ingredients: In a large mixing bowl, combine ground chicken, 1 cup grated Parmesan cheese, panko breadcrumbs, eggs, 4 minced garlic cloves, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix gently until all ingredients are just incorporated, being careful not to overmix to maintain tenderness.
  3. Shape the Meatloaf: Form the mixture into a loaf shape using your hands and place it on the prepared baking sheet or press it evenly into the loaf pan for uniform cooking.
  4. Bake the Meatloaf: Bake the meatloaf at 375°F (190°C) for 40–45 minutes, or until it becomes firm and reaches an internal temperature of 165°F (74°C) to ensure it is fully cooked.
  5. Prepare Garlic Parmesan Glaze: While the meatloaf bakes, melt the butter in a small saucepan over medium heat. Add 2 minced garlic cloves and sauté for 1–2 minutes until fragrant but not browned. Stir in 1/4 cup grated Parmesan cheese, chopped parsley, and a pinch of salt. Cook for another 1–2 minutes, stirring frequently until the glaze thickens slightly.
  6. Glaze the Meatloaf: When the meatloaf is almost done baking, remove it from the oven and brush the warm garlic Parmesan glaze generously over the top. Return it to the oven and bake for an additional 5–7 minutes until the glaze is bubbly and lightly golden.
  7. Rest and Serve: Allow the meatloaf to rest for about 5 minutes after baking to let the juices settle. Garnish with extra fresh parsley, slice, and serve with your favorite sides such as mashed potatoes or roasted vegetables.

Notes

  • Do not overmix the meatloaf mixture to keep it tender and moist.
  • Use a meat thermometer to ensure the internal temperature reaches 165°F for safe consumption.
  • The garlic Parmesan glaze adds a rich, savory finish but can be omitted for a simpler version.
  • Letting the meatloaf rest before slicing helps maintain its shape and juiciness.
  • Leftovers can be used in sandwiches for a delicious next-day meal.
