Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to ensure easy removal and prevent sticking.
  2. Mix the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Gently mix just until all ingredients are combined to keep the meatloaf tender.
  3. Press Meat into the Dish: Spread the meat mixture evenly across the bottom of the prepared baking dish, creating a flat layer. Bake uncovered for 20–25 minutes, allowing the meat to cook through partially.
  4. Prepare the Mashed Potatoes: While the meat is baking, warm the mashed potatoes. Stir in sour cream and butter to make them creamy and smooth. Season with salt and pepper to your taste.
  5. Layer the Mashed Potatoes: Once the meatloaf layer is partially cooked, carefully spread the prepared mashed potatoes evenly over the meat layer in the baking dish.
