Ingredients

Scale

Chicken Mixture

  • 4 cups cubed rotisserie chicken or chicken breast, cooked and cubed
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 tbsp almond flour

Cheese and Topping

  • 3/4 cup parmesan cheese, grated
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps or pork rinds

Other

  • Non-stick cooking spray

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Combine Chicken Mixture: Add Italian seasoning, marinara sauce, almond flour, and cubed cooked chicken into the skillet. Stir well to combine all ingredients and cook for about 5 minutes to heat through and allow flavors to meld.
  4. Prepare Casserole Dish: Spray a 9” x 13” casserole dish with non-stick cooking spray to prevent sticking.
  5. Assemble Casserole: Pour the chicken and marinara mixture into the prepared dish and spread evenly. Layer the grated parmesan cheese over the top, followed by the shredded mozzarella cheese. Finally, sprinkle the finely crushed parmesan crisps or pork rinds evenly as a crispy topping.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until the casserole is heated through and the cheese is fully melted and bubbly.
  7. Rest and Serve: Remove the casserole from the oven and allow it to cool for a few minutes before serving to let the flavors settle.

Notes

  • For an extra crispy topping, broil the casserole for an additional 2-3 minutes after baking, watching carefully to avoid burning.
  • You can substitute pork rinds with crushed pork scratchings or omit for a less crunchy topping.
  • This casserole can be made ahead and refrigerated; reheat covered in the oven to retain moisture.
  • Adjust garlic amount based on your preference for flavor intensity.
