Dry Ingredients

  • 1 cup rolled oats
  • ½ cup mixed nuts (cashews, almonds, walnuts), roughly chopped
  • ¼ cup pumpkin seeds
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • ½ cup dried cranberries (or raisins)
  • ½ tsp cinnamon
  • Pinch of salt

Wet Ingredients

  • ¼ cup natural peanut butter or almond butter
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Combine Dry Ingredients: In a large mixing bowl, mix together rolled oats, chopped nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries (or raisins), cinnamon, and a pinch of salt until evenly distributed.
  3. Melt Wet Ingredients: In a small saucepan over low heat, gently melt the natural peanut butter and honey together, stirring continuously until the mixture is smooth and well combined. Remove from heat and stir in the vanilla extract.
  4. Mix Wet and Dry: Pour the melted peanut butter and honey mixture over the dry ingredients. Stir thoroughly until all ingredients are well coated and a sticky dough forms.
  5. Shape Cookies: Using a spoon or cookie scoop, portion the dough onto the prepared baking sheet. Flatten each ball slightly with the back of the spoon or your fingers to form cookie shapes.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12–15 minutes until the cookies turn golden brown on the edges.
  7. Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your healthy energy cookies as a snack or quick energy boost.

Notes

  • You can substitute dried cranberries with raisins or chopped dried apricots for variation.
  • For a vegan option, use maple syrup instead of honey and ensure the nut butter is vegan-friendly.
  • Store cookies in an airtight container at room temperature for up to one week or freeze for longer storage.
  • If you prefer a crunchier texture, toast the nuts and seeds lightly before mixing.
  • Feel free to add other seeds like sunflower or hemp seeds to boost nutritional content.
