Instructions

  1. Prepare the Pastry: In a large bowl, whisk together the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  2. Make the Filling: In a medium bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, cloves, salt, vanilla extract, and cornstarch. Mix well until smooth and set aside.
  3. Roll Out Pastry: On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches diameter) to cut out circles. Gather scraps, re-roll, and cut out more circles until all dough is used.
  4. Fill Pasties: Place about 2 tablespoons of pumpkin filling in the center of each dough circle. Be careful not to overfill to prevent leaking during baking.
  5. Seal and Crimp Edges: Fold each circle in half to form a half-moon shape. Press edges together firmly, then crimp with a fork to seal completely.
  6. Apply Egg Wash: Place pasties on a baking sheet lined with parchment paper. Brush each with the beaten egg to give them a golden, shiny finish once baked.
