These festive Grinch Mini Cheesecakes are the perfect holiday treat, featuring a rich and creamy neon green cheesecake filling on a crunchy Oreo crust. Easy to make and delightfully fun, they bring a pop of color and flavor to any celebration.

Ingredients

Scale

Crust

  • 1 cup Oreo Crumbs
  • 2 1/2 tbsp Butter, Melted

Cheesecake

  • 2 (8 oz) Cream Cheese, Softened
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • Neon Green Food Coloring, to desired color

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners to prepare for the cheesecakes.
  2. Make Crust: Pulse about 10-11 Oreos in a food processor until they form fine crumbs. Add the melted butter and pulse again until the mixture is evenly combined and holds together when pressed.
  3. Form Crust Base: Evenly divide the Oreo crumb mixture between the cupcake liners. Press firmly and evenly into the bottom of each liner to create a solid crust base.
  4. Prepare Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar together until the mixture is smooth and creamy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Add Color: Mix in neon green food coloring gradually until the desired Grinch-themed green color is achieved.
  6. Fill Cups: Spoon about 1/4 cup of the cheesecake mixture into each cupcake liner, filling them evenly and leaving a little room at the top.
  7. Bake: Bake the mini cheesecakes in the preheated oven for 15-17 minutes. The centers should remain slightly jiggly when done.
  8. Cool and Chill: Remove the pan from the oven and allow the cheesecakes to cool completely at room temperature. Then, refrigerate until fully set and firm, at least 2 hours or overnight.
  9. Serve: Optionally, top with whipped cream and festive sprinkles before serving for an extra special touch.

Notes

  • Use room temperature cream cheese for the smoothest filling.
  • Do not overbake; slight jiggle in the center ensures creaminess.
  • Neon green food coloring can be adjusted for preferred intensity.
  • Can be made a day ahead and refrigerated until serving.
  • For a chocolate twist, use chocolate sandwich cookies with no cream for the crust.
