  • ½ cup (120g) extra virgin olive oil
  • 2 tablespoons red wine vinegar

Instructions

  1. Prepare Ingredients: Start by gathering all your ingredients. If using chili peppers, chop them and remove seeds to control the heat level. Peel and roughly chop half a garlic clove.
  2. Blend Base Mixture: In a food processor set to low speed, combine the chopped chili pepper, garlic, extra virgin olive oil, and red wine vinegar. Optionally add 1-3 roasted sweet red peppers for added sweetness and depth. Blend until the mixture is smooth and well combined.
  3. Add Feta and Yogurt Gradually: With the food processor running on low, gradually add the crumbled feta cheese and Greek yogurt. Stop blending occasionally to check the consistency. If the dip becomes too thick, add more yogurt step by step until you achieve a creamy, spreadable texture to your liking.
  4. Refrigerate to Set: Transfer the dip to a bowl and cover it tightly with plastic wrap or place it in an airtight container. Refrigerate for at least 1 hour to allow flavors to meld and the dip to firm up slightly before serving.
  5. Garnish and Serve: Before serving, sprinkle the dip with red chili pepper flakes, sweet or smoked paprika, and garnish with olives if desired. Serve chilled as a flavorful appetizer with pita bread, crackers, or fresh vegetables.
