Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic to expose the cloves, drizzle it with 1 tablespoon of olive oil, wrap it tightly in aluminum foil, and roast it in the oven for 30-35 minutes until the cloves become soft and caramelized. Once done, allow to cool slightly. Squeeze the softened garlic cloves out of their skins into a bowl.
  2. Prepare the Spinach: Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste, then remove from heat and set aside.
  3. Make the White Sauce: Mash the roasted garlic in the bowl with a fork until smooth. Add the ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix thoroughly until well combined to create a creamy garlic-ricotta sauce.
  4. Assemble the Pizza: Spread the roasted garlic and ricotta mixture evenly over the pizza crust. Layer the sautéed spinach evenly on top, then sprinkle the remaining mozzarella cheese and crumbled feta cheese. If you prefer a little heat, sprinkle crushed red pepper flakes over the top.
  5. Bake the Pizza: Place the assembled pizza on a baking sheet and bake in the preheated oven at 400°F (200°C) for 15-20 minutes until the crust is golden brown and the cheeses are bubbly and lightly browned.
