Ingredients

Scale

Dough

  • 1/4 cup sugar
  • 1 cup milk, warmed to 110°F
  • 1 tablespoon instant yeast
  • 3 tablespoons butter, melted
  • 2 large eggs
  • 3 cups gluten free flour (see notes)
  • 2 tablespoons heavy cream

Filling

  • 1/4 cup unsalted butter
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract

Cream Cheese Frosting

  • 6 ounces cream cheese, softened
  • 1/3 cup unsalted butter, softened
  • 1 1/2 cups confectioners sugar
  • 1/4 teaspoon salt

Instructions

  1. Activate the Yeast: Combine sugar, warmed milk, and instant yeast in a large bowl. Cover and set aside for 15 minutes until the yeast is activated and foamy.
  2. Make the Dough: Add eggs and melted butter to the yeast mixture and beat until smooth. Gradually fold in the gluten free flour, adding ½ cup at a time, then knead the dough for 5 minutes. It will be tacky and soft; avoid adding extra flour. Cover and let it rise in a warm spot for 1 hour.
  3. Prepare the Filling: In a separate bowl, combine the unsalted butter, brown sugar, and vanilla extract until creamy and well mixed.
  4. Roll out the Dough: Dust a clean counter with gluten free flour. Roll the dough into a rectangle about 1/4-inch thick.
  5. Assemble the Rolls: Spread the cinnamon filling evenly over the dough. Starting from the longer side, roll the dough tightly into a log. Cut into 8 large or 10 smaller rolls and arrange them in a butter-greased baking dish.
  6. Final Rise: Brush the rolls with heavy cream and let them rest uncovered for 15 minutes to rise slightly.
  7. Preheat the Oven: Heat the oven to 375°F (190°C).
  8. Bake the Rolls: Bake for 35-40 minutes or until the rolls turn golden brown around the edges.
  9. Make the Cream Cheese Frosting: Beat together softened cream cheese, unsalted butter, confectioners sugar, and salt until smooth and creamy.
  10. Frost the Rolls: Once the cinnamon rolls have cooled to room temperature, spread the cream cheese frosting evenly on top before serving.

Notes

  • Use a gluten free all-purpose flour blend suitable for baking to achieve the soft texture.
  • Do not add extra flour while kneading the dough; gluten free dough tends to be softer than traditional dough.
  • For softer rolls, cover them lightly while resting.
  • Ensure milk is warmed to about 110°F to properly activate the yeast without killing it.
