Cinnamon Sugar Swirl

  • 2 oz (55 g) butter (softened, at room temperature)
  • 2 oz (55 g) granulated sugar
  • 2 tsp (4 g) ground cinnamon
  • 1 Tbsp pancake batter

Cinnamon Butter (Personal Addition)

  • 4 oz (115 g) butter (softened, at room temperature)
  • 2.12 oz (60 g) powdered sugar
  • 1 1/2 tsp (3 g) ground cinnamon
  • 1.41 oz (40 g) honey
  • 1/2 tsp (2.5 g) vanilla bean paste
  • 1/16 tsp (0.38 g) sea salt

Instructions

  1. Pumpkin Spice Pancakes Batter Preparation: In a mixing bowl, whisk together all-purpose flour, baking powder, baking soda, sugar, ground cinnamon, and pumpkin pie spice. Create a well in the center and add the egg, milk, pumpkin purée, vegetable oil, and vanilla bean paste. Mix gently until just combined—avoid overmixing to keep your pancakes fluffy. Set the batter aside.
