Roasted Garlic

  • 2 heads garlic
  • 1 teaspoon olive oil

Dip

  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese (about 1 cup)
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh chopped parsley, for garnish
  • Crostini or crackers, for serving

Instructions

  1. Prepare Roasted Garlic: Preheat your oven to 400℉. Remove excess papery layers from the outside of the garlic heads. Cut off about ¼ inch from the top of each garlic head to expose the individual cloves. Discard the cut portion.
  2. Roast Garlic: Create a small foil bowl to hold the garlic heads upright. Place garlic heads in it and drizzle with olive oil. Wrap completely with foil and roast in the oven for 40-50 minutes until soft and lightly browned. Remove and cool before handling.
  3. Reduce Oven Temperature: Lower oven temperature to 350℉ to prepare for baking the dip.
  4. Make Garlic Paste: Squeeze the roasted garlic cloves out of their skins into a mixing bowl. Mash with a fork until smooth and paste-like.
  5. Combine Dip Ingredients: Add cream cheese and sour cream to the mashed garlic and mix thoroughly. Stir in shredded mozzarella, half of the parmesan cheese, salt, and pepper until fully combined.
  6. Prepare for Baking: Spread the dip mixture evenly into a small baking dish (8×8 inch square or 8-9 inch pie pan). Sprinkle the remaining parmesan cheese evenly over the top.
  7. Bake the Dip: Bake in the oven for 25-28 minutes until the dip is hot, bubbly, and the top is lightly golden brown. Remove from oven and let cool for 5 minutes.
  8. Garnish and Serve: Sprinkle fresh chopped parsley over the top. Serve warm with crostini or crackers for dipping.
