Dough

  • 500 g All-purpose or bread flour
  • 1 tablespoon Instant yeast
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Kosher salt
  • 1 ⅔ cups Water

Egg Wash & Toppings

  • 1 Egg yolk
  • 1 tablespoon Yogurt
  • 1 tablespoon Water
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Nigella seeds

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, sift the flour, then add the instant yeast, kosher salt, and sugar. Mix thoroughly to combine all dry ingredients evenly.
  2. Form the dough: Slowly add the water to the dry mix, stirring until the dough begins to come together. Transfer the dough to a stand mixer fitted with a dough hook and mix on medium-high speed for 8-10 minutes until soft and elastic.
  3. First rise: Cover the bowl with a towel and let the dough rise in a warm spot for about 1 hour, or until it doubles in size.
  4. Divide and shape: Punch down the risen dough to release air. Place it on a floured surface and divide into two equal pieces. Shape each piece into a ball and roll out into a circle using a rolling pin.
  5. Second rest: Cover the dough circles with a towel and allow to rest for 20 to 30 minutes. Meanwhile, preheat the oven to its highest temperature, around 225°C (440°F).
  6. Prepare egg wash: In a small bowl, whisk together the egg yolk, yogurt, and water until smooth.
  7. Create dough indents and add toppings: Use your fingertips to press indents around the edge of each dough circle, making 3-4 rows of indents inside the bread’s center as well. Brush the entire surface with the prepared egg wash and sprinkle sesame and nigella seeds evenly on top.
  8. Bake the bread: Place the flatbreads on a baking sheet or stone on the middle rack of the preheated oven. Bake for 15-20 minutes or until golden brown and cooked through, being careful not to overbake to avoid dryness.
  9. Finish and serve: Optionally brush the baked bread with olive oil for extra flavor and shine. Serve warm with your favorite dips or alongside meals.
