Ingredients

Scale

Egg Whites Mixture

  • 6 egg whites, room temperature
  • ½ teaspoon white vinegar

Egg Yolks Mixture

  • 6 egg yolks, room temperature
  • 4 ounces cottage cheese
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup whey protein powder
  • ¼ cup egg white protein powder
  • 1 tablespoon Allulose (optional)
  • 1 teaspoon vanilla extract (optional for French Toast only)

Optional Toppings

  • Bagel seasoning

Instructions

  1. Preheat Oven and Prep Egg Whites: Preheat your oven to 300°F (150°C). Place the egg whites in a stand mixer or use an electric hand mixer with a splash of white vinegar. Whip the egg whites on high speed until stiff peaks form, about 10-15 minutes. Set aside once done.
  2. Combine Egg Yolks and Remaining Ingredients: In a separate bowl, whisk together the egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, Allulose (if using), and vanilla extract (optional). You can also blend these ingredients until smooth for a uniform mixture.
  3. Fold Mixtures Together: Gently fold a small portion of the egg yolk mixture into the whipped egg whites, incorporating gradually until fully combined, ensuring the batter remains light and airy.
  4. Pour and Bake: Pour the combined batter into a parchment-lined and greased 5″ x 9″ loaf pan or, if making rolls, onto a parchment-lined baking sheet or silicone mold. Place on the middle rack of the preheated oven and bake for 50 minutes or until a toothpick inserted comes out clean and the top is golden brown.
  5. Rest and Serve: After baking, turn the oven off but leave the bread inside for an additional 10 minutes without opening the door. Remove from the oven and allow to cool slightly before slicing and serving.

Notes

  • Ensure eggs are at room temperature for better volume when whipping whites.
  • Allulose is optional and can be omitted if you prefer no added sweetness.
  • Vanilla extract is optional and recommended only if making French Toast with this bread.
  • For rolls, use silicone molds or a lined baking sheet and reduce baking time slightly to about 35-40 minutes, checking doneness with a toothpick.
  • Be gentle when folding to keep the mixture airy and fluffy.
