Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 6 large eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup almond flour (or coconut flour)
  • 1/4 cup oat fiber or protein powder (optional)
  • 1 teaspoon apple cider vinegar

Optional Seasonings

  • garlic powder (to taste)
  • rosemary (to taste)
  • Italian seasoning (to taste)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Blend Ingredients: In a blender or food processor, combine the cottage cheese, eggs, almond flour, optional oat fiber or protein powder, baking powder, salt, and apple cider vinegar. Blend the mixture until it becomes smooth and well incorporated.
  3. Pour Batter into Pan: Pour the smooth batter into the prepared loaf pan, smoothing out the top to ensure even baking.
  4. Bake the Bread: Place the pan in the preheated oven and bake for 35 to 40 minutes. Test doneness by inserting a toothpick into the center; it should come out clean.
  5. Cool Before Slicing: After baking, allow the bread to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.

Notes

  • For a dairy-free option, substitute cottage cheese with a non-dairy alternative, though texture may vary.
  • If using coconut flour instead of almond flour, reduce the amount slightly as coconut flour absorbs more liquid.
  • Optional seasonings like garlic powder, rosemary, or Italian seasoning can be added during blending for extra flavor.
  • This bread is best served fresh but can be stored in the refrigerator for up to 4 days.
  • Reheat slices lightly in a toaster or oven before serving for a warm, fluffy texture.
  • Adding oat fiber or protein powder is optional but helps with structure and increases protein content.
