  • 10 corn tortillas
  • 2 tablespoons vegetable oil
  • 2 cups tomato sauce

  • Salt and pepper to taste

Instructions

  1. Heat Oil and Soften Tortillas: In a skillet, heat vegetable oil over medium heat. Lightly fry the corn tortillas for about 10-15 seconds per side, just enough to soften them. Remove from the pan and drain on a paper towel.
  2. Sauté Aromatics: Using the same skillet, add chopped onion and minced garlic. Sauté until translucent, about 2-3 minutes.
  3. Prepare Tomato Sauce: Pour in the tomato sauce, cumin, chili powder, salt, and pepper. Stir to combine and simmer for about 5 minutes, allowing the flavors to meld.
  4. Preheat Oven: Preheat your oven to 350°F (175°C).
  5. Layer Entomatadas: In a baking dish, spread a thin layer of the tomato sauce mixture at the bottom. Dip each fried tortilla into the tomato sauce and layer them in the baking dish. Sprinkle each tortilla with shredded cheese and a little cilantro, then cover with more sauce. Repeat the layering process until all tortillas are used.
  6. Bake: Top the final layer with cheese and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove from the oven and garnish with additional cilantro and a dollop of sour cream if desired. Serve warm.
