Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook 12 ounces of spaghetti according to package directions. When the pasta is done, reserve 2/3 cup of the pasta water before draining the noodles.
  2. Sauté mushrooms: While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 pound of sliced cremini mushrooms and cook, stirring occasionally, for 5-7 minutes until the mushrooms are tender and browned.
  3. Add garlic and season: Stir in 4-6 chopped garlic cloves and season with a pinch of kosher salt and ground pepper. Cook for 1 more minute to let the garlic release its fragrance.
  4. Toss pasta and cheese: With the skillet still on heat, add the drained spaghetti, 1/2 cup grated Pecorino Romano cheese, and the reserved pasta water. Use tongs to toss everything together well, allowing the starchy water and cheese to form a creamy sauce that coats the pasta.
