Ingredients

Scale

Main Ingredients

  • 1 (26oz) bag frozen meatballs (about 55 small meatballs)
  • 2 cups baby carrots
  • 5 stalks celery, chopped

Gravy Mixture

  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix
  • 2 cups water
  • ¼ cup butter, sliced into small pieces

Side

  • 1 (24oz) container refrigerated mashed potatoes (or homemade mashed potatoes)

Instructions

  1. Prepare Ingredients: Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker evenly distributing them.
  2. Make Gravy: In a small bowl or large measuring cup, whisk together the two packets of brown gravy mix with two cups of water until smooth.
  3. Add Gravy to Slow Cooker: Pour the cold gravy mixture over the meatballs and vegetables in the slow cooker, then gently toss to coat everything evenly.
  4. Season: Sprinkle the packet of Lipton onion soup mix evenly over the top of the mixture in the slow cooker.
  5. Add Butter: Slice the butter into small pieces and place them evenly on top of the ingredients in the slow cooker for richness.
  6. Cook: Cook on LOW for 3 to 4 hours. Stir halfway through the cooking time to ensure the meatballs and veggies cook evenly and the butter and seasonings are fully incorporated.
  7. Prepare Mashed Potatoes: Shortly before serving, heat and prepare the refrigerated mashed potatoes according to the package instructions or warm your homemade mashed potatoes.
  8. Serve: Serve the meatball pot roast hot over the prepared mashed potatoes, garnishing with additional herbs if desired. Enjoy this hearty, comforting meal!

Notes

  • The recipe uses about 55 small frozen meatballs, but you can adjust the quantity as desired. Kirkland brand from Costco is recommended for quality and taste.
  • If you prefer, substitute mashed potatoes with baby potatoes or chopped potatoes added directly to the slow cooker; these will cook in about the same time as the carrots.
  • Optional additions include onions, mushrooms, garlic, or black pepper to enhance the flavor.
  • Serve the pot roast over a baked potato or cooked rice for a tasty variation.
  • Crispy garlic bread or dinner rolls pair wonderfully with this main dish.
