Matcha Mascarpone Cream
- 1½ cups heavy whipping cream
- ½ cup granulated sugar
- 2 tsp matcha powder
- 1 tsp vanilla extract
- 8 oz mascarpone cheese, at room temperature

- Combine Mascarpone: Gently fold the mascarpone cheese into the whipped cream mixture just until combined. Avoid overmixing to keep the cream light and fluffy. Set the cream aside.
- Make Matcha Soaking Liquid: In a shallow bowl, whisk together hot water and matcha powder until the matcha is completely dissolved and smooth.
- Dip Ladyfingers: Quickly dip each gluten free ladyfinger into the matcha water (do not soak them) and lay them in a single layer on the bottom of an 8×8 inch dish. Trim or cut the cookies if necessary to cover the bottom evenly. If cookies absorb liquid quickly, prepare additional matcha soaking liquid.
- Add First Cream Layer: Spread half of the matcha mascarpone cream evenly over the layer of dipped ladyfingers and smooth with a spatula.
- Add Second Layer: Dip the remaining ladyfingers in matcha water and add them as a second layer on top of the cream. Follow with the remaining mascarpone cream and smooth the surface.
- Dust with Matcha: Use a fine mesh strainer to dust the top layer generously with matcha powder.
