This Easy Low Carb Chicken Casserole is a delicious, comforting dish combining tender cooked chicken, crispy bacon, fresh broccoli, and a creamy ranch cheese mixture baked to bubbly perfection. It’s a quick, satisfying meal ideal for low carb and keto lifestyles, with a cheesy topping that melts beautifully in the oven.

Ingredients

Scale

Casserole

  • 5 cups broccoli florets
  • 8 slices cooked bacon, chopped into 1/2-inch pieces
  • 4 cups cooked chicken, shredded or diced into 1/2-inch pieces
  • 3 cloves garlic, finely minced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup ranch dressing (preferably Hidden Valley Original Ranch)

Topping

  • 1/2 cup shredded cheddar cheese (Tillamook Medium Cheddar recommended)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven and prepare vegetables: Preheat your oven to 375°F (191°C). If using fresh broccoli, boil it for 1–2 minutes until bright green, then drain well. If using frozen spinach, thaw completely and squeeze out any excess water.
  2. Mix casserole ingredients: In a large bowl, combine the cooked chicken, chopped bacon, prepared broccoli (or spinach), minced garlic, ranch dressing, and half of the shredded mozzarella and cheddar cheeses. Mix thoroughly to evenly distribute all ingredients. Optionally, add ranch seasoning for extra flavor. For fewer dishes, you may mix everything directly in your casserole dish.
  3. Transfer to casserole dish: Pour the mixed ingredients into a 9×13 inch (23×33 cm) casserole dish, spreading evenly.
  4. Add cheese topping: Sprinkle the remaining shredded mozzarella and cheddar cheeses evenly over the top of the casserole mixture.
  5. Bake until bubbly: Bake the casserole in the preheated oven for about 15 minutes, or until the cheese topping is hot, melted, and bubbly. Remove from oven and let it cool slightly before serving to allow flavors to settle.

Notes

  • You can substitute broccoli with spinach for a different vegetable option; just make sure to properly thaw and drain.
  • Feel free to add ranch seasoning mix for more intense flavor if desired.
  • Using pre-cooked chicken and bacon saves time for a quick weeknight meal.
  • The casserole can be reheated gently in the oven or microwave for leftovers.
  • For a crispier top, broil the casserole for the last 1-2 minutes, watching carefully to prevent burning.
