4.9 from 5 reviews

This Easy Grilled Cheese Burrito is a delicious Taco Bell-inspired copycat recipe featuring seasoned ground beef, rice, creamy sauces, and melted cheese all wrapped in a warm flour tortilla and grilled to perfection for a crispy, cheesy crust.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)

Filling

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: Brown the ground beef in a skillet over medium heat, breaking it up with a spatula. Once fully cooked, drain any excess grease. Add the taco seasoning along with ¼ cup of water, then simmer the mixture for about 5 minutes until well combined and flavorful.
  2. Warm the Tortillas: To make the tortillas flexible and easy to roll, heat them briefly on a dry skillet over medium heat or microwave them for about 15-20 seconds.
  3. Assemble the Burrito: Lay one warmed tortilla flat on a clean surface. Spread a layer of cooked rice, then add a generous portion of the seasoned beef. Drizzle the nacho cheese sauce and chipotle sauce evenly over the filling, followed by spoonfuls of sour cream. Sprinkle the shredded cheddar and mozzarella cheeses on top to complete the layers.
  4. Grill the Burrito: Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese on it. Place the assembled burrito seam-side down on top of the cheese, pressing gently. Cook for 3 to 4 minutes until the cheese melts and forms a crispy crust underneath. Carefully flip the burrito and grill the other side similarly until golden and crispy.

Notes

  • Use homemade taco seasoning for a fresher flavor and control over salt and spices.
  • Substitute cooked rice with cauliflower rice for a low-carb version.
  • Butter or oil can help achieve a golden crust on the tortilla while grilling.
  • Adjust the amount of chipotle sauce to control the heat level to your preference.
  • Leftover burritos can be wrapped in foil and refrigerated for up to 2 days; reheat in a skillet or oven to maintain crispiness.
