Instructions

  1. Activate yeast: In a large bowl, combine 2 cups of warm water with the honey or sugar and stir until dissolved. Sprinkle in yeast, stir gently, and set aside for 10 minutes until foamy and doubled in size.
  2. Make the dough: In a separate bowl, mix flour and salt. Pour in the yeast mixture and 1 tbsp olive oil. Mix until sticky dough forms. Cover and let rise in a warm spot for 1 to 3 hours until doubled.
  3. Prepare garlic-herb butter: Melt salted butter over low heat, add minced garlic and chopped parsley, and gently simmer until fragrant, avoiding burning the garlic.
  4. Incorporate garlic butter: After the first rise, with oiled hands, scrape dough sides, pour in slightly cooled garlic butter. Stretch and fold dough 8 times, then cover and rest for 15 minutes for a second rise.
  5. Prepare pan and final rise: Grease a 9×13 inch pan with olive oil. Drizzle 4-6 tbsp olive oil on bottom. Transfer dough gently, stretch to fit without tearing, cover, and let rise 45 minutes for final proof.
  6. Add toppings and bake: Sprinkle grated Parmesan and any seasonings over dough. Drizzle 4-6 tbsp olive oil on top. Use oiled fingers to dimple dough surface. Preheat oven to 450°F (232°C) and bake 18-22 minutes until golden brown and crisp. Optionally, drizzle extra olive oil after baking.
