Egg Mixture
- 6 large eggs
- 2 tablespoons milk
- ¼ teaspoon salt
- Freshly ground black pepper, to taste
Other Ingredients
- 1 (4-ounce) can mild diced green chiles
- 1 cup grated cheddar cheese
- Preheat Oven and Prepare Baking Dish: Adjust the oven rack to the center position and preheat your oven to 350°F (175°C). Grease a 9-inch glass pie plate or a similarly sized baking dish with butter or spray with nonstick cooking spray to prevent sticking.
- Layer Green Chiles and Cheese: Evenly spread the canned mild diced green chiles in the bottom of the prepared dish. Sprinkle the grated cheddar cheese on top of the green chiles. Set this aside for now.
- Mix Eggs: In a large bowl, crack and scramble the 6 eggs. Beat in the 2 tablespoons of milk, ¼ teaspoon salt, and freshly ground black pepper to taste until the mixture is well blended and uniform in color.
- Combine and Pour: Slowly pour the egg mixture over the green chiles and cheese in the baking dish. If any cheese pieces are sticking out above the eggs, press them gently down with the back of a fork so they are submerged in the egg mixture.
- Bake: Place the dish in the preheated oven and bake for 25 to 30 minutes. The egg bake is done when the center is puffy and a thin knife inserted into the center comes out clean.
- Cool and Serve: Allow the egg bake to cool for a few minutes before slicing. Serve warm for best flavor and texture.
Notes
- You can substitute fresh roasted or thawed frozen diced green chiles for the canned ones, keeping in mind they may be spicier.
- This recipe is highly customizable; you can omit the green chiles or replace them with diced Canadian bacon, ham, cooked crumbled breakfast sausage, or sautéed onions and mushrooms.
- Cheddar cheese can be swapped with other shredded cheeses such as Monterey Jack, pepper jack, or Swiss, which pairs well with ham.
- The recipe was updated to use 6 eggs instead of 5, increasing the yield slightly and allowing easy doubling with a full carton of eggs.
