Instructions

  1. Prepare the Ingredients: Peel the potatoes and cut them into bite-sized cubes. Thinly slice the onions and mince the garlic cloves carefully to have all ingredients ready for cooking.
  2. Caramelize Onions: Heat the vegetable oil in a pan over medium heat. Add the thinly sliced onions and cook them slowly for about 10-12 minutes until they turn golden brown and develop a sweet, rich flavor. Stir occasionally to avoid burning.
  3. Add Garlic & Spices: Stir in the minced garlic, turmeric, cumin, paprika, salt, and black pepper. Cook for an additional minute until the garlic is fragrant and spices are well combined with the onions.
  4. Cook the Potatoes: Add the cubed potatoes to the pan, stirring well so they are coated evenly with the spiced onion mixture.
  5. Add Tomatoes & Liquid: Pour in the diced tomatoes along with water or vegetable broth. Stir the mixture thoroughly to combine all the ingredients.
  6. Simmer: Cover the pan and let it cook for 15-20 minutes over medium-low heat. Stir occasionally to prevent sticking and check that the potatoes become tender and the sauce thickens nicely.
  7. Finish & Serve: Taste and adjust seasoning by adding more salt or spices if needed. If using dried lime powder, stir it in now for an added tangy flavor. Garnish with fresh cilantro or parsley and serve warm alongside flatbread or rice.
