Ingredients

Scale

Toffee Base

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Topping

  • 1 cup semi-sweet or milk chocolate chips
  • 0.5 cup chopped nuts (pecans, walnuts, or almonds)

Instructions

  1. Prepare the Baking Dish: Line a 9×13-inch baking dish or baking sheet with parchment paper or a silicone mat to prevent the toffee from sticking.
  2. Combine Ingredients: In a heavy-bottomed saucepan, combine unsalted butter, granulated sugar, salt, and water over medium heat. Stir constantly to dissolve the sugar and prevent burning.
  3. Cook to Hard Crack Stage: Using a candy thermometer, cook the mixture until it reaches the hard crack stage (around 300°F or 149°C). This ensures the toffee will be crunchy and set properly.
  4. Pour Toffee Mixture: Once the desired temperature is reached, remove the saucepan from heat and carefully pour the hot toffee onto the prepared baking sheet, spreading it evenly.
  5. Add Chocolate Topping: While the toffee is still warm, sprinkle 1 cup of chocolate chips evenly on top. Let them sit for about 2 minutes to melt, then spread the melted chocolate smoothly over the toffee.
  6. Sprinkle Nuts: Evenly sprinkle ½ cup of chopped nuts over the melted chocolate and gently press them in to ensure they stick well.
  7. Allow to Cool: Let the toffee cool at room temperature for about 2 hours until completely set and hardened before breaking into pieces.

Notes

  • Using unsalted butter helps control the saltiness and balance the flavors.
  • A candy thermometer is essential to achieve the perfect hard crack temperature.
  • Store toffee in an airtight container at room temperature to keep it fresh and crunchy.
  • Feel free to experiment with different types of nuts or substitute chocolate chips with your favorite chocolate bars chopped up.
