Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup salsa
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste

Taquitos

  • 8 small flour or corn tortillas
  • Cooking spray or oil (for brushing)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Filling: In a large bowl, mix the cooked shredded chicken, softened cream cheese, shredded cheddar or Mexican blend cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper until all ingredients are well combined and creamy.
  3. Warm Tortillas: Warm the tortillas in the microwave for about 20 seconds. This softens them, making them more pliable and easier to roll without cracking.
  4. Assemble Taquitos: Spoon 2 to 3 tablespoons of the chicken mixture onto one side of each tortilla. Roll the tortilla tightly around the filling, then place each rolled taquito seam-side down on the prepared baking sheet to help keep them closed during baking.
  5. Brush with Oil: Lightly brush or spray each taquito with cooking oil to help them crisp up nicely in the oven.
  6. Bake: Bake the taquitos in the preheated oven for 15 to 20 minutes until they turn golden brown and crispy on the outside.
  7. Optional Broil: For an extra crispy finish, broil the taquitos for an additional 1 to 2 minutes, watching carefully to prevent burning.
  8. Serve: Serve warm with your choice of toppings such as chopped cilantro, sour cream, guacamole, or extra salsa for dipping.

Notes

  • Use corn or flour tortillas depending on preference; warming them helps prevent cracking when rolling.
  • Customize the filling by adding diced jalapeños or chopped onions for extra flavor.
  • For a smokier flavor, try adding a pinch of smoked paprika to the seasoning mix.
  • Leftover taquitos can be stored in the refrigerator and reheated in the oven to maintain crispiness.
  • To make these gluten-free, use gluten-free corn tortillas.
