Ingredients

Scale

For the Sliders

  • 2 lbs steak (ribeye, sirloin, or flank)
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • Slider buns or mini brioche rolls
  • Optional toppings: cheese slices, sautéed onions, arugula, pickles

For the Cowboy Butter

  • ½ cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon red pepper flakes
  • 1 teaspoon lemon juice
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Make the Cowboy Butter: In a small bowl, mix melted butter with garlic, parsley, Dijon mustard, red pepper flakes, lemon juice, paprika, salt, and black pepper. Stir well and set aside to let flavors combine.
  2. Prep the Steak: Pat the steak dry with paper towels. Season both sides generously with salt and pepper for maximum flavor.
  3. Sear the Steak: Heat olive oil in a cast iron skillet or grill pan over medium-high heat until hot. Add steak and sear for 3–4 minutes per side for medium-rare, adjusting time based on thickness. Remove steak and let it rest for 5–10 minutes to keep juices locked in. Then slice thinly against the grain for tenderness.
  4. Toast the Buns: While the steak rests, place the slider buns cut side down in the hot skillet. Toast for 1–2 minutes until golden and slightly crispy.
  5. Assemble the Sliders: Place sliced steak on the bottom halves of the toasted buns. Spoon a generous amount of the prepared cowboy butter over the steak. Add any desired optional toppings such as cheese, sautéed onions, arugula, or pickles. Cap with the top buns.
  6. Serve Immediately: Serve the sliders hot, accompanied by extra cowboy butter on the side for dipping if desired. Enjoy right away for the best flavor and texture.

Notes

  • Use ribeye for the richest flavor, or sirloin/flank for a leaner option.
  • Letting the steak rest after cooking ensures juiciness and tenderness.
  • Customize your sliders with cheese varieties like provolone or pepper jack.
  • Try different buns like Hawaiian rolls for a sweeter option.
  • Serve with sides like garlic fries or coleslaw to complete your meal.
  • Store leftover cowboy butter in the fridge and re-melt before use.
