Sauce Ingredients

  • 3 tablespoons butter
  • ¼ cup flour
  • 2 cloves garlic, finely minced
  • ¾ teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ¼ teaspoon pepper
  • ¾ cup low sodium chicken broth
  • ¾ cup heavy cream
  • 3 tablespoons Parmesan cheese, shredded (divided)
  • 1½ cups shredded mozzarella cheese (divided)
  • 8 oz (250 grams) cream cheese, softened

Main Ingredients

  • 2 cups cooked, chopped chicken breast (about 2 chicken breasts)

Instructions

  1. Make the roux: Melt the butter in a medium skillet over medium heat. Whisk in the flour until mixture is smooth and bubbly to create the base for the sauce.
  2. Add seasonings and garlic: Stir in the finely minced garlic, salt, dried parsley, dried oregano, and pepper. Cook for about 1 minute to allow the flavors to bloom.
  3. Create Alfredo sauce: Gradually whisk in the low sodium chicken broth and heavy cream, mixing continuously to avoid lumps. Continue cooking over medium heat, whisking often, until the sauce thickens and becomes smooth.
  4. Cheese integration: Stir in 3 tablespoons of Parmesan cheese and ½ cup of shredded mozzarella cheese into the sauce. Remove from heat and set aside.
  5. Combine cream cheese and Alfredo sauce: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Add the prepared Alfredo sauce and continue beating until fully combined and creamy.
  6. Add chicken and season: Fold the chopped cooked chicken into the creamy Alfredo mixture. Taste and adjust seasoning as needed.
  7. Prepare for baking: Spread the mixture evenly into a 1 to 1.5-quart baking dish. Sprinkle the top with the remaining 1 cup of shredded mozzarella cheese and 1 tablespoon of Parmesan cheese.
  8. Bake: Bake in a preheated 400°F (204°C) oven for 15 to 20 minutes until the dip is bubbly and starting to brown on top.
  9. Serve: Serve warm with fresh vegetables, crackers, or crusty bread for dipping. This dip can also be covered and refrigerated for up to 2 days before baking.

Notes

  • For best flavor, use freshly shredded cheeses rather than pre-shredded ones to melt better and avoid additives.
  • You can substitute cooked rotisserie chicken or leftover chicken to save time.
  • Make sure cream cheese is softened for easier mixing and a smoother dip.
  • This dip can be made ahead and refrigerated covered for up to 2 days and then baked when ready to serve.
  • Adjust the seasoning as per your taste – more garlic or herbs can be added for a stronger herbal flavor.
  • Serve with veggies like carrots and celery or assorted crackers for a variety of textures.
