Meat Filling

  • 1 small onion, peeled and finely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 75 g (3/4 packed cup) strong cheddar cheese, grated
  • 75 g (3/4 packed cup) red Leicestershire cheese, grated
  • 2 tbsp finely chopped pickled gherkins (dill pickles, cornichons, or burger pickle slices)

Spring Rolls

  • 12 spring roll wrappers
  • Oil for deep frying (enough to fill a heavy-based pan to about 5cm depth)

Special Sauce

  • 6 tbsp mayonnaise
  • 6 tbsp tomato ketchup
  • 1 tbsp mild yellow mustard (such as French’s yellow mustard)

Instructions

  1. Cook the beef mixture: Heat a large frying pan over medium-high heat. Add the minced beef, finely chopped onion, salt, and black pepper. Fry for 6-7 minutes, stirring regularly to break up any chunks, until the beef is fully browned and the onion is soft.
  2. Cool the beef mixture: Turn off the heat and allow the beef mixture to cool for 20-30 minutes. To speed cooling, transfer it to a bowl. The mixture should reach around room temperature before proceeding.
  3. Prepare the special sauce: While the beef cools, mix together the mayonnaise, tomato ketchup, and mild yellow mustard in a small bowl. Set aside for serving.
  4. Combine cheese and gherkins: Once the beef mixture has cooled, gently stir in the grated cheddar cheese, grated red Leicestershire cheese, and the finely chopped pickled gherkins until well combined.
  5. Heat the frying oil: In a heavy-based pan, heat oil to about 190°C (375°F). Make sure there’s enough oil to deep fry the spring rolls, roughly 5 cm deep.
  6. Assemble the spring rolls: Lay one spring roll wrapper on a clean surface with a corner pointing towards you. Place a heaped tablespoon of cooled beef mixture near the bottom corner about 1 inch from the edge. Shape the filling into a sausage shape horizontally. Carefully roll the wrapper up, tucking in the edges to seal the filling, creating a thick cigar-shaped spring roll. Use a little water on your fingers to seal the edge securely. Place the finished spring roll on a plate or baking tray, covering other wrappers with a damp towel to prevent drying. Repeat with remaining wrappers and filling.
  7. Deep fry the spring rolls: Once the oil reaches temperature, carefully add six spring rolls to the pan without overcrowding. Fry for 3-4 minutes, turning often to achieve a golden brown and crisp exterior. Remove spring rolls and drain on paper towels. Repeat with remaining spring rolls.
  8. Serve: Serve the golden cheeseburger spring rolls hot, accompanied by the prepared special sauce for dipping.
