  • 1 tbsp Worcestershire sauce
  • ¼ tsp freshly ground black pepper

  1. Prepare the base: In a large frying pan, melt the butter over medium heat, creating a rich foundation for the sauce.
  2. Sauté shallots: Add the finely chopped banana shallot to the pan and cook for 3–4 minutes until softened and fragrant, developing flavor.
  3. Add garlic: Stir in the minced garlic and cook for an additional 1 minute to release its aroma without burning it.
  4. Add cream and cheese: Pour in the double cream and add the crumbled Stilton cheese. Reduce the heat to low and stir continuously for about 5 minutes, breaking down the cheese with the back of your spoon to achieve a smooth, thickened sauce.
  5. Season the sauce: Stir in Worcestershire sauce and freshly ground black pepper to enhance depth and balance the sharpness of the blue cheese.
  6. Final simmer: Serve immediately, or let the sauce simmer gently on low for a few more minutes to thicken further, stirring regularly to prevent sticking.
