Ginger Simple Syrup
- 1 knob of peeled raw ginger, about 2 inches long
- ½ cup water
- ½ cup sugar
Mojito Ingredients
- 1 cup fresh lightly packed mint leaves
- 2 limes, sliced into wedges
- 8 ounces white rum
- Blood Orange Soda (San Pellegrino recommended)
- 1 cup unsweetened pure cranberry juice

- Make the Ginger Simple Syrup: In a small saucepan, combine the peeled ginger, sugar, and water. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves completely, about 2 minutes. Remove from heat and set aside to cool. This syrup can be prepared ahead of time and refrigerated.
- Prepare the Sugar Rims: Rub the rims of four heavy highball glasses with a lime wedge to moisten them. Dip each rim gently into brown sugar, coating it thoroughly, then allow the rims to dry while you prepare the drinks.
- Muddle Mint, Lime and Simple Syrup: Divide the fresh mint leaves and lime wedges evenly among the four glasses. Add about 2 tablespoons of the ginger simple syrup to each glass. Use a muddler to gently press and twist the mint, lime, and syrup together at the bottom of the glass to release the oils and juice without tearing the mint leaves excessively.
- Add Ice, Rum and Blood Orange Soda: Fill each glass with ice cubes. Pour 2 ounces of white rum into each glass, then top up most of the way with blood orange soda, leaving room for the cranberry juice float.
- Float Cranberry Juice: Gently pour about 2 tablespoons of unsweetened cranberry juice on top of each drink to create a visually appealing layered effect. You can choose to serve it as is or stir gently to blend the flavors.
- Garnish and Serve: Garnish each mojito with fresh mint leaves, a few fresh cranberries, and slivers of candied ginger. Serve immediately and enjoy the refreshing combination of fruity, spicy, and citrusy flavors.
