Apple Filling
- 3 medium Granny Smith apples, finely diced
- Juice from 1/2 fresh lemon
- 2 tablespoons pure maple syrup
- 2 tablespoons light brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
Mousse
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 teaspoon ground cinnamon
- 1 teaspoon apple pie spice
- 1 ¾ cups milk
- 1 ¼ cups heavy whipping cream
- ¾ cup powdered sugar
- 8 oz cream cheese or mascarpone cheese, at room temperature
Tiramisu Assembly
- 4 tablespoons milk
- 4 tablespoons bourbon
- 2 packages (7 oz each) ladyfingers
- 1/4 cup caramel sauce
- Walnuts for garnish (optional)
- Prepare the Apple Filling: Dice the Granny Smith apples into small pieces roughly the size of a dime. Squeeze the juice of half a lemon over the apples and stir to coat. Add the brown sugar, all-purpose flour, maple syrup, and ground cinnamon to the apples, then mix everything thoroughly. Heat the mixture on the stove over medium heat for 15-20 minutes, stirring occasionally. Add 1-2 teaspoons of water if the mixture starts to stick to the pan. Cook until the apples are soft and tender, then allow the mixture to cool completely.
- Make the Vanilla Mousse: In a medium bowl, whisk together the instant vanilla pudding mix, ground cinnamon, and apple pie spice. Gradually add the 1 ¾ cups of milk while whisking until the pudding mix is dissolved. Refrigerate the pudding mixture for 10-15 minutes until it firms up.
- Prepare the Whipped Cream: Pour the heavy whipping cream into a chilled bowl. Using an electric mixer on high speed, beat the cream until stiff peaks form. Add the powdered sugar and continue whipping until the peaks hold firmly. Set aside.
- Combine Cream Cheese and Pudding: Beat the cream cheese on medium-high speed for 2-3 minutes until smooth, scraping down the bowl as needed. Slowly add the chilled pudding mixture to the cream cheese, beating to combine and eliminate lumps. Then gently fold in half of the whipped cream until well incorporated.
- Assemble the Tiramisu: Line the bottom of a 9 x 9 x 2-inch pan with parchment paper. In a shallow bowl, combine the 4 tablespoons of milk and 4 tablespoons of bourbon. Quickly dip each ladyfinger into the mixture and lay them in a single layer at the bottom of the pan. Drizzle caramel sauce over the ladyfingers. Trim ladyfingers to fit if necessary.
- Layer Mousse and Apple Filling: Spread half of the mousse evenly over the ladyfingers. Then layer 1 ¼ cups of the cooled apple filling evenly over the mousse, gently pressing it in slightly.
- Create Additional Layers: Repeat dipping ladyfingers in the bourbon-milk mixture to create a third layer. Drizzle caramel over these ladyfingers as well. Spread the remaining mousse evenly on top, followed by the remaining apple filling. Finish by topping with the remaining whipped cream.
- Chill and Serve: Refrigerate the assembled tiramisu for at least 1 hour to let the flavors meld and the dessert set. Just before serving, drizzle with any remaining caramel sauce and sprinkle with walnuts or toffee pieces if desired.
